IFT: Current Food Trends 2023

At IFT First, the focus of innovations in food can yield interesting insights into current food trends. 2023 wasn’t our first time at IFT. Here are some of the trends in food and beverage industry we heard as visitors stopped by our Blue Ribbon Fig Ingredients booth.

Filled Bars

Filled bars are back—think the soft, tender cookie dough enfolding a rich fig paste tucked inside. Think of it as wanting to eat the cookie—but a healthier cookie.

Functional Bars

Whole food nutrition continues its saturation of the marketplace with functional bars that consider the flavor, but also the nutritional benefits for each ingredient in products with short recognizable product ingredient lists.

Lower Sugar

Sweeten your product with fruit. More Americans are consciously trying to lower their sugar, opt for no-sugar-added products, or eat more fruit.

Snack On

Smaller meals still reign with a move from snack time to snack-size for different mealtimes.

Sip This

Whether it’s adding fig extract to seltzer or flavoring alcohol-free beverages with fig concentrate for subtle fruit flavor and color, this trend is on the way up.
