Take a Break with Cake

Did you know that right now one of the most searched for recipes online is Fig Almond Cake? Almonds and figs are brilliant together, whether you opt for deeply rich fruit flavor in Mission Figs or the somewhat nutty, delicately sweet Golden Figs. We have fig almond cake recipes below for every kind of occasion, including cheese boards—some fig “cakes” like Pan de Higo are meant to be sliced to serve along cheese. 

A Bit about Almonds

Using almonds in baking can take several forms:

  • Almond extract—swap in for vanilla extract to boost the almond flavor in cakes, or scent hot water with extract to rehydrate the dried figs (particularly good with Golden Figs) and infuse almond flavor into the fruit.
     
  • Almond Flour—Most of the cakes below use almond flour—almonds ground to a flour consistency. It’s often used in gluten-free baking and creates a light crumb while providing structure for the fig cake. 
     
  • Almonds—Sliced, slivered, chopped, and whole. Often, almonds in these capacities are used to garnish the outside of a cake. The pan de higo and panforte use whole almonds and whole dried figs to great effect.
