Oats

You can’t have oatmeal energy balls without the oats, but not all oats are the same in the store aisle. This energy bite recipe calls for old-fashioned oats also sometimes labeled as rolled oats. They’re a bigger cut size than “Instant Oats” which you could use as a substitute if necessary. Steel cut oats won’t cut it here. If you follow a gluten-free lifestyle, make sure to look for a gluten-free stamp or call-out on the label—oats are naturally gluten-free, but sometimes grown in close proximity to grains that are not.

Peanut Butter

Smooth peanut butter is the go-to ingredient here. Paired with the figs and oats, they all act as binders to hold the energy balls together.

Coconut Shreds

Unsweetened coconut adds additional fiber and MCT’s, along with manganese, copper, and iron. If you’re not so keen on coconut, the energy balls don’t use such a significant amount and are not coconut flavor forward.

Ingredients

Instructions

  • In a food processor, pulse oats until finely processed and a flour like consistency.
  • Add California Figs, peanut butter, coconut shreds, and cinnamon. Pulse until batter begins to come together pulling from the sides of the food processor.
  • Roll dough into 1 tablespoon size bites. Lay bites on a parchment paper lined sheet and cool in the fridge for one hour so the bites can firm up.
  • After oatmeal energy balls have firmed up, transfer to an airtight container in the refrigerator. Store for up to one week in the refrigerator.
