Try making sweet potato “toasts” that roast rounds of sweet potato until almost fork tender, to be topped as we do here, with a sprinkle of blue cheese, quartered mission fig, and drizzle of honey. If you want to add some greens to the mix, arugula would work well here too—just broil the blue cheese on the sweet potatoes until slightly melted to help the arugula adhere and then add the fig and honey.
