The secret of taking cheesy sandwiches from good to grate (we couldn’t help the cheese pun) is time, heat, and fat.

  • If you’re used to buttering bread before it hitting the skillet, try mayonnaise—it provides a golden crust that doesn’t burn as easily as butter.
  • Then, we like medium heat as the temperature of choice.
  • Finally, you want to see the cheese begin to soften along the edges of the bread crust as a marker that the middle is molten and all melty.
  • Bonus tip: dried figs! Added as a jam or sliced onto cheese is a pro move to go gourmet at home. Here are some ideas below.
